To me, greedy for strudel and tarte tatin, the first thing that comes to mind to do with baked apples, is a pie. It is not trivial, to prepare a really good one, a lot of care is required, starting with the choice of the type of apples to use. For a really tasty apple pie, the most suitable variety is the Golden Delicius, with a thin yellow skin and crunchy and very sweet pulp, but this "rule" does not apply if you want to prepare a different dessert instead of the classic apple pie. Apple pancakes, for example, or a strudel.

In this case, it is better to go for the rennet apples, with their yellow skin flecked with dark spots, large and floury pulp. It is a precious and appreciated apple also for the fact that it can be kept for a long time and its pulp remains soft and tasty even if the skin wrinkles.

Caramelized baked apple

Even caramelized, the apple is delicious, albeit not much anymore suitable for flu or constipation. Perfect, however, for a snack that makes you find a good mood. In America caramelized apples are used a lot, at Christmas time but we also find them in our continent at parties and festivals. Preparing them is not complex, it is nothing but cooked apples coated with a fairly thick layer made of white or cane sugar, corn syrup, water.

Unfortunately, sometimes, if you buy them around, you will also find red dye to light up the color, one more reason to learn how to cook them at home. The most suitable varieties are Stark Delicius, Gala, Granny Smith and Fuji, the other necessary ingredients are sugar, water and corn syrup, but they can then be flavored with a sprinkling of cinnamon or cloves.

Let's now pass to the classic cooked apples, simple and genuine. All the more reason, given that in this case there are not many ingredients to integrate the recipe, it is essential that the variety chosen is the right one to obtain a really tasty result. The baked apple

Ideal is one Organic Golden, perfect with its pulp that melts after cooking and hardly needs additional sugar. But let's see the characteristics of other varieties that we may happen to have at home and want to cook in this way. The Chanteclerc they are very sweet as are the Granny-Smiths, even if a little sour and with hints of pear. The Red Delicious are sweet and fragrant like the Jonagold, while the Boskoop have a sweet and sour taste, but they are juicy, therefore excellent to cook.

The famous ones Royal Gala they are a good middle ground between sweet and sour, they have a juicy pulp and a fragrant texture. These apples are excellent both alone and in recipes such as apple pie, while there are others that are more appropriate to serve in wedges, fried, or caramelized. In this category we find the Renetta, sweet and with hints of honey, the Dorato, firm and juicy but slightly acid, and the Pink Lady, fragrant and sweet. Braeburn and Calville Blanc d’Hiver are also juicy, while Ambrosia and Honey Crunch are more crunchy, the latter, however, is also very sweet.

Baked apple: recipes

It's easy but it's not as trivial as it seems, prepare baked apples, it is better to follow the instructions, after having chosen the cooking method that is most comfortable for us.

Today it seems obvious to be able to prepare them with the microwave, and it is actually possible to do so, with excellent results. Let's take for example two Renettas or two Golden unpeeled, 30 grams of brown sugar and half a teaspoon of cinnamon. We wash the apples and cut them into cubes, leaving the skin but removing the core. Put the cubes in a bowl suitable for microwave cooking and cook at 700 W for 2 minutes, then sprinkle everything with a mix of brown sugar and cinnamon, stirring and putting back in the microwave for another 2 minutes.

Preparing apples in the traditional oven is equally easy. It is always necessary to leave the peel and remove the core and then arrange apples in a baking dish all whole with lemon juice, brown sugar and, if desired, cinnamon sticks. On the bottom you need a little water on the bottom, then they must cook at 200 degrees for about 30 minutes.

Those who wish can cook apples also in a pan, even if it is definitely more uncomfortable. In this case it is better to cut the apple into wedges and put it in a pan with a little butter. To caramelize, we can add some sugar.
